Granny Lee’s Peanut Butter Cookies

I am so excited to bring you my family recipe for Granny Lee’s Peanut Butter Cookie in cooperation with Unearth Hope for their Great Cookie Run.

Unearth Hope is a non-profit based in North Carolina. They provide relief for families in Guatemala. Since Covid has made it not possible to travel, they decided to use a virtual cookie run to raise funds for relief and future medical teams. When I got a letter from one of my great aunts talking about my great Granny Lee’s Peanut Butter Cookies, I knew this was the perfect recipe for Christmas time. I don’t remember meeting her but I have heard many great stories about Granny. She was a hard working, dairy farmers wife and could make anything taste good. Christmas is all about family. This year has made it more difficult to be with them but we can find creative ways to stay close. So here’s to you Granny and finding ways to stay close to those you love!

Granny Lee’s Peanut Butter Cookies

These cookies are great to make in big batches because they freeze well. They usually don’t make it to the freezer in my house though! Makes 3 dozen 2.5 inch cookies

You will need:

  • ½ cup butter (Granny used soft shortening because it was more cost effective)
  • ½ cup sugar
  • ½ cup brown sugar (packed)
  • ½ cup creamy peanut butter (I use all natural peanut butter. My cookies are not as sweet but I prefer it that way. If you use a kind that is shelf stable (like Jiff) then they will be sweeter. If you want to use all natural peanut butter but would like them a little sweeter just add an extra ¼ cup of sugar.
  • 1 egg
  • 1 ¼ cup sifted flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Directions:

  1. In a large bowl add ½ cup of butter, ½ cup sugar, ½ cup brown sugar, ½ cup peanut butter, and 1 egg cracked into a separate bowl first. (You don’t want nasty bits of egg shell or heaven forbid a rotten egg cracked in with all the other ingredients.)
  2. Thoroughly combined together.
  3. Add 1 ¼ cup sifted flour, ½ teaspoon baking powder, ½ teaspoon baking soda, and ¼ teaspoon salt. Mix together.
  4. Chill dough for at least a couple of hours. (I usually get busy and don’t remember it until much later. So this is a great one to make ahead and bake later)
  5. Preheat the oven to 375 degrees.
  6. Lightly grease the baking sheet.
  7. Roll dough into balls about the size of walnuts and place about 3 inches apart.
  8. Flatten cookies in a crisscross pattern with a fork.
  9. Bake until set but not hard. 10-12 minutes depending on your oven.
  10. Let cool slightly before removing.
