This is super quick and easy salsa. No stove top required; only a blender! I grew up eating this and nothing compares for me. For a few years my dad had a vegetable garden when I was a kid. We would get to have the freshest salsa! Seriously guys, it’s so good! My dad’s secret was he added olives. I know! It sounds crazy but it makes a huge difference. They help to add some saltiness without having to add tons of salt. The pop of added color is a big bonus for me too. We eat with our eyes as well as our mouths. I love beautiful food and this salsa is it for me!
You will need:
- Blender
- 4 Roma tomatoes
- ½ orange bell pepper
- ½ yellow bell pepper
- 1-2 jalapeño peppers (We like spice. So 2 it is for us!)
- ½ red onion
- 15 green olives with some of the brine
- ½ tsp salt
- 2-3 cloves of garlic
Directions:
- Chop the ½ orange, ½ yellow, and 1-2 jalapeño peppers and onion into quarters. Only a rough chop is necessary. The blender will do all the hard work!
- Pulse the peppers and onion in the blender until they are broken down. Chunky is good at this point.
- Quarter the 4 roma tomatoes. Add to blender.
- Add the 15 olives and a splash of the olive brine. Add ½ tsp of salt and 2-3 cloves of garlic.
- Pulse the blender until everything is small enough to your liking. I am usually careful at this stage to make sure I don’t liquify the salsa. I like my salsa not super chunky but not soup.
- Taste and adjust as necessary. Enjoy your easy salsa! My favorite chips are the Santitas Yellow Corn tortilla chips.
